my father-in-law requested pineapple upside down cake for his birthday last week. i have only ever used smitten kitchen’s recipe, because once i tried it, i had no need to go searching for another. it’s fantastic. there really is nothing quite like fresh pineapple. so juicy, tropical, and exquisite. it’s making my mouth water as i type. combine this amazing fruit with a buttery cake and a caramel-y layer….to die for. it really is quite sinful. but totally worth it.***
