peppermint bark.  it never appealed to me before.  but then i got this wild idea to whip up chocolate peppermint cupcakes.  and all the recipes i saw had crushed mints on top.  i didn’t like that at all.  i mean who wants to bite into a soft, moist, delicious cupcake and then crunch down on hard, painful mints?!  not i, my friend.  not i.

so i thought, if i make peppermint bark, i can break it up into little pieces, stick a piece in the frosting, and then when you eat the cupcake, you have a bit of candy to enjoy as well.  now doesn’t that sound like a much better plan?  i thought so too.

i found this super simple peppermint bark recipe on food.com.  as soon as i read that this was a copycat recipe of Williams Sonoma peppermint bark (that costs $26/lb), i knew it would be a winner.  (whowouldeverpaythatmuchforcandy????)

if you have a bag of chocolate chips, a bag & a half of white chips, peppermint extract & some candy canes, you’re in business.  and seriously, everyone is so impressed that i made peppermint bark.  and i just chuckle to myself because this was like a recipe that those people on ‘worst cooks in america’ could follow.  for reals, people.  so go make some, and impress someone.  i know you can.***
